Here’s the healthy & delicious zucchini garlic bites recipe:


  • 1 cup zucchini, grated and wrung out
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup Parmesan cheese, grated finely
  • 1 clove garlic, grated
  • 1 teaspoon fresh basil, chopped
  • 1 teaspoon fresh oregano, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • pinch of salt and pepper
  • Marinara sauce, for dipping


Preheat the oven to 400˚ F – (200°C). Lightly coat a baking sheet with a thin layer of olive oil or non-stick spray. Set aside.

To get the desired crispy taste, try to squeeze out as much moisture as possible from the zucchini. Then, shred the zucchini using a food processor or hand grater. Place the zucchini shreds in a kitchen towel and wring out the moisture.

Now grate the garlic using the small holes on the box grater, and mix all the ingredients. Shape the mixture into small balls in the size of a tablespoon, and place them on the prepared baking sheet, you should end up with about 12-16 balls.
